Scorching Hot Chicken Wings on the Air Fryer

This is one of my favorite recipes for hot wings on a cooker or grill and need to adapt it to the NuWave 10 Quart Air Fryer.

I think they look pretty good. I served them with some veggies and a poppy seed dip and it sure made a fine lunch. 

I like to bread them as the breading will hold more of the hot sauce and this old chili head loves this type of food.

Here is my recipe for this treat.

For about 20-25 wing pieces

1/2 cup milk
1 egg
1/2 cup flour
1/2 cup corn meal
1 tsp white pepper
1 tsp fresh ground black pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp cayenne pepper (optional on this amount) Wimps might use a 1/2 teaspoon

I am a chili-head and often double the spices in this recipe if I am cooking the wings just for myself.

Prep the milk and egg wash and then the dry ingredients. Wings into the wash and then rolled in the dry coating. Fridge the wings for about 45 minutes for the coating to set.

Make up your favorite hot wing sauce for basting the wings. I am sure my mixture will be tooo hot for most folks but here it is.

1 cup Louisiana hot sauce
1/4 stick of melted butter
1/8 cup honey
1/8 cup rooster
2 TBL Tabasco
2 tsp ground cayenne pepper

Egg wash first, then into my breading, and then on a plate.

They go into the fridge for about an hour to allow time for the breading to set up.

Ready to go into the air fryer. I did hit them with some olive oil spray to help prevent them from sticking to the grid.

I pulled them out of the air fryer after the first 16 minutes, sauced them, and turned them over and sauced them and placed them back into the cooker.

They were cooked at 390 degrees for 16 minutes and then sauced and turned over and sauced on that side and then cooked for 12 more minutes.

I used a glass pie pan under my wings and a pizza screen on top and then foiled the pizza screen. Cooking without any heat coming from the bottom of the air fryer is kinda difficult as the breading tends to stick to about anything I have used to cook them on. I did oil the foil and the wings came out very good with not much sticking and the breading stayed on the wings quite well.

They didn't get quite as crisp at the ones I do on an outside grill but were still great.

That is a poppyseed dressing dip in the bowl on the plate.


All in all a pretty good cook but did have one small problem. The fat from the wings didn’t have anyplace to go and wanted to make the bottom side of the breading on the wings slightly soggy...I had to turn them more times that I wanted to prevent this. I should have poked some holes in the foil to allow the fat to run off the cooking grid.

New Cobb Supreme / Hot Buffalo Wings

The next cook in my New Cobb Supreme were some scorching hot chicken wings.

Now, would you believe that I had this for breakfast. A fellow needs a good solid breakfast with juice and some meat!

I like the hot Buffalo wings breaded as I can get much more hot sauce on them this way. These wings were sauced 4 times during the cook.

Used an egg and milk wash and the breading consisted of black,red, and white pepper, onion powder, garlic powder, and a mix of corn meal and flour.

I like to bread the wings and then place them in the fridge for about an hour before the cook. Gives the breading time to set up a little before the fire.

You think that Supreme doesn't cook evenly?? Just look how nice the wings are cooked just before we started applying the hot sauce.
I used 14 all hardwood briquets for this cook and it took about an hour to get the wings done.

My sauce mix includes some Frank's Hot Sauce, some melted butter, 1/8 cup honey, 1/8 cup rooster, 4 TBL Tabasco, and about 1 TBL of ground cayenne pepper.

Breaded & Super Hot Buffalo Wings / Cobb Grill

This chili-head loves hot stuff and this was my latest cook on the Cobb Grill.

I like to bread my wings as the breading will hold a lot more of the hot sauce that goes on the wings. Also make for a better tasting wing.

Served with some jalapeƱo and cream cheese crackers and stuffed celery.  A nice hot wing lunch.

Hot Wings on the Weber Jumbo Joe Kettle

This is a little Hot Wing Cook I did on the Weber Jumbo Joe a few weeks ago.

Breaded my hot wings and made up my sauce.

Fired up the Jumbo Joe and added the Mini-Vortex and a piece of hickory for smoke and then loaded the wings.

Sauced them a few times and took the wings off of the cooker. That little kettle sure does a nice job with wings.

Along with some chips and a couple of deviled eggs and one of those Zombie Dust Ales, it sure made a nice snack.

Nashville Style Hot Wings

There is a new recipe out there on many recipe and forum web sites for this great sounding treat.

It is a deep fried hot wing and the three pound recipe calls for an overnight buttermilk soak, a 1/2 cup of ground cayenne pepper as the first ingredient in the rub, and a sauce that starts with a 1/2 cup of lard.

Now, that probably doesn’t sound very good to a “normal” person but for me as a chili head it looked great and I couldn’t hardly wait to try it.

Anyway, I did this recipe and followed all the directions and this is what it looked like.

These came out looking great but were so hot that a fellow couldn’t really taste anything other than the cayenne heat and it was overbearing with heat. If a fellow wanted just pure heat, this would work. I think my smoked hot wing is better and don’t think I will be making any more of this recipe.

Breaded & Smoked Hot Wings / Weber Jumbo Joe

Got an early start this morning with some hot wings.

Made up the egg wash and then the hot breading and prepped my hot wings.

Placed them in the fridge for about an hour so the breading can set up before I cook them.

Fired up a half chimney of lump charcoal and waited for it to get right.

While the charcoal was getting right, I made up my hot sauce.

This cook was done in my Weber Jumbo Joe with the Mini Vortex holding the charcoal.

I used a piece of hickory for the smoke and just cooked my hot wings until they were done.

Hot Buffalo Bites & Wings / Weber Jumbo Joe

This cook was done in my Weber Jumbo Joe with the Mini-Vortex SS charcoal ring and using  a hickory chunk for smoke.

The hot wings were breaded by going thru an egg wash and then rolled into a mixture containing flour, cornmeal, black pepper, white pepper, cayenne pepper, garlic powder, and onion powder.

The wings were sauced several times with a mixture of Louisiana hot sauce, butter, Rooster, Tabasco, cayenne pepper, and honey.

The Buffalo bites went thru the same wash and breading as above but with far less ground cayenne. The bites are for the wife and she doesn’t do hot stuff!
